I don’t have time to eat healthy. By now, we all know that’s nonsense. Do you really have time for heart disease?  Watch me make a delicious, healthy meal in just 10 minutes. We call this….HAIL CAESAR: Tofu, Butternut Squash and Caesar Salad!

EXTRA FIRM (EXTRA FIRM!!! ABSOLUTELY CRUCIAL) TOFU, CHOP IT UP, ADD  DOLLOP OF OLIVE OIL, CHOPPED GARLIC, BRAGG’S LIQUID AMINOS SEASONING. COOK OVER HIGH FLAME. ONCE SLIGHTLY BROWNED, PUT IN BOWL AND ADD NUTRITIONAL YEAST AND JUST MAYO VEGAN MAYO.

OK, CONFESSION: THE FRESH, ORGANIC BUTTERNUT SQUASH WAS PRE-CUBED… BUT STILL. DONNA BOILED IT IN WATER UNTIL TENDER, THEN PUT IT IN A BOWL AND SMUSHED IT WITH A DOLLOP OF OIL AND A PINCH O’ SEA SALT.

LETTUCE: NEEDS NO EXPLANATION.. EXCEPT IT WAS NOT BAGGED IN PLASTIC. IT WAS FROM THE LOCAL FARMER’S MARKET. AVOCADO WAS OFF A STREET VENDOR. DAIYA SHREDDED VEGAN CHEESE.

CAESAR DRESSING: A DOLLOP OF ORGANIC (JUST ASSUME ORGANIC WHENEVER POSSIBLE) OIL, OLIVE OIL, CHOPPED GARLIC, BRAGG’S LIQUID AMINOS INSTEAD OF SALT, THROW IN A SLICE OF AVOCADO, ADD JUST MAYO (VEGAN AND SO DELICIOUS IT’S NOW BEING SUED BY BIG FOOD) –STIR AND POUR.
